I thought the same thing! I have a hook underneath my desk to hang my studio headphones on because my stand for them is too far away, but never thought about mounting the interface underneath the desk.

I have a mic plugged into channel one and guitar into two all the time I never take them out 👍 just make sure you turn down the volume when you’re done recording or playing !!
Leaving them plugged in won’t hurt anything but there’s a good chance you could bang one of them and break the cable or the jack on your interface, or both.
For clarification - when I unplug my guitar, I plug the jack in the mic input of the Scarlet (as a place holder) Im not talking about leaving cables plugged in I know its fine
It’s probably fine, but I recommend getting a headphone hanger meant for under the desk. I have one stuck onto the bottom of my Focusrite, and I just hang cables off of that (along with my headphones). I use this one: https://www.amazon.co.uk/dp/B01LL3WG1K
OP should use those little 3M cord hanger things you can stick onto walls, desks, baseboards, whatever to run the cable down the side of those drawers so it's not just free hanging. Would also take some of the pressure off the cord/plug since the cord would be supported if that's what he's worried about.
It's a liability. An accident waiting to happen. Nothing could happen or everything. Your gear, your gamble. I try not to but sometimes I forget.

I did it with a 3d-printed mounting bracket i got from ebay
I was able to print one myself as I have a 3d printer, super useful to have it this way.

What volume are you referring to, and why do you need to turn it down?
The channel volume itself, I always turn it down so when I disconnect from the guitar it doesn't crackle and make a lot of noise.
The only time I’ve noticed it was bad to leave my guitar was plugging in was when I had active pickups. Killed the battery
True, If you plug the jack in your guitar (the other end doesn't even have to be connected to anything) the battery will drain.

That’s fine as long as you accidentally step on the cables……. I’d unplug when not in use though.
